Low Carb Pizza Bites

There's no need to deny your cravings for pizza while on the Keto diet. Thanks to several varieties of low carb dough recipes on the internet, you can now eat pizza without any of the guilt! Some low carb dough is made from cauliflower and other recipes even use canned chicken! For this recipe, we used the classic Fathead dough recipe because it's (A) so easy to make and (B) it's quite versatile for making baked goods that need to hold their shape.
The Fathead dough starts out as a mound of cheese that you melt in the microwave and then form into a soft ball. The whole process takes less than 5 minutes to cook and form. Once the dough cools, you'll roll it out thinly so that you can cut tiny circles to assemble a pizza crust base. We placed our dough circles into silicone baking cups so that the mini pizzas would come out looking nice. Inside each dough cup, we added pepperoni slices, the oh-so-tasty Rao's homemade vodka sauce (only 3 net carbs for a 1/2 cup), cheese, and additional toppings. The great thing about these bites is that you can get the whole family involved with making their own personalized pizza bites. We tried variations with goat cheese, cheddar cheese, and mozzarella cheese toppings.
Once the pizza bites are assembled, you'll bake them in the oven until the edges are golden brown, about 20 to 25 minutes. As tempting as they might look to eat, we recommend waiting about 5 minutes to allow these to cool before removing them from their silicone baking cups. Fortunately, popping these out of the silicone baking cups makes clean up so easy and they will hold their shape well.
You can serve the pizza bites immediately or you can store them in the fridge for an upcoming party. Your Keto friends will be shocked to learn that these little snacks are low carb. We suggest you make a double recipe because these snacks will disappear fast! At only 1.5 net carbs per serving (as prepared), we hope you'll love these tasty pizza bites!

Ingredients:
Pizza crust:
3/4 cup Bob's Red Mill almond flour
2 cups shredded mozzarella cheese
4 Tablespoons cream cheese
1 egg
1/2 tsp Trader Joe's onion salt (or regular salt)
Pizza toppings:
sliced olives
sliced pepperoni
goat cheese or shredded mozzarella cheese
Directions:
Step 1 - Heat oven to 425 degrees. Line muffin tins with silicone cupcake holders.
Step 2 - Combine the cream cheese and shredded mozzarella cheese in a microwave safe bowl. Melt the cheese until most of the mozzarella cheese looks melted (up to 2 minutes). Stir cheese mixture until a soft ball forms. If cheese isn't melted, microwave for 30 seconds more and then stir.
Step 3 - Add the almond flour, onion salt, and egg to the warm cheese mixture. Stir ingredients until combined. Using a strong spatula, gently knead the dough for about 90 seconds, making sure that all of the flour is properly incorporated.
Step 4 - Place dough mound in between two large rectangle sheets of parchment paper.
Step 5 - On a smooth kitchen surface, roll out the dough between the parchment papers until dough is thin.
Step 6 - Remove the top layer of parchment paper and begin to cut out your circle shapes using a round cookie cutter (we used a cup shape). The dough will be sticky and fragile, so be sure to be gentle as you pull up the cutter.
Step 7 - Place the dough circle in the bottom of your cupcake holders. Gently press the dough into the bottom and sides, removing air bubbles and sealing up any cracks.
Step 8 - Place two pieces of pepperoni on the bottom of the dough cup.
Step 9 - Add a tiny amount of sauce (2-3 teaspoons) and then top with cheese, and any additional pizza toppings.
Step 10 - Place the mini pizzas in the oven and bake until golden brown around the edges, about 20 to 25 minutes.
Step 11 - Remove the pizzas from the oven and let them cool for about 5-10 minutes, until you can safely remove the silicone cupcake holders from the aluminum muffin tin.
Step 12 - Gently remove the pizzas from the silicone cupcake holders. Your pizzas are now ready to eat!
