Low Carb Bread Pudding

Bread pudding on the Keto diet? This might seem like an oxymoron but you can safely indulge in this low carb dessert and still remain on Keto! We used a low carb bread with a high fiber content, which only had one net carb per slice. Any low carb bread should work, as long as it's about 1 gram of carbs per slice, so that you have some wiggle room for the rest of the ingredients.
We really like using breads from the Great Low Carb Bread Company because you can freeze their loaves until you are ready to use them. Like most low carb breads, they can have a dense texture. If you have some leftover, why throw away a perfectly fine ingredient when you can use it for making a scrumptuous low carb dessert?
We baked these in oven-safe mugs to give them a festive presentation. The mugs help to keep the egg mixture from spilling out and the mugs even help with portion control. If you don't have access to oven-safe mugs, you can also use ramekins.
The sprinkling of low carb dark chocolate chips add flavor while they melt into the layers of bread and sweet almond milk.
Ingredients:
4 slices of white bread diced in to 1 inch cubes
1 cup unsweetened almond milk
2 eggs beaten
3 Tbsp unsalted butter
2 Tbsp Swerve Sweetener, Granular, 12 Ounce or Powdered
1 tsp vanilla extract
1/2 tsp cinnamon
2 Tbsp HERSHEY'S Kitchens Sugar Free Chocolate Chips, 8 Ounce *optional
Directions:
Step 1 - Cut bread in to 1 inch cubes. Drop the bread cubes into a buttered mug.
Step 2 - Heat the almond milk in a pot on the stove until it's just about to a boil. Add butter to the warm almond milk mixture and stir to melt. Add the sweetener, vanilla, and cinnamon. Whisk mixture until smooth.
Step 3 - When almond milk mixture has cooled, add two beaten eggs.
Step 4 - Pour the liquid mixture over the bread cubes. If using chocolate chips, sprinkle those on top. Cover with foil and refrigerate for 24 hours.
Step 5 - The next day, preheat oven to 375. Place covered mugs in center of the oven and bake for about 25 minutes or until set (liquids should no longer be runny). Let cool and enjoy while slightly warm!
