Halloween is almost here, so let’s celebrate with some ghoulishly good Keto snacks - homemade guacamole with cheese crisps. This fresh guacamole is bursting with flavor and the clove of garlic will help to keep away the vampires. The zero carb crunchy cheese crisps for dipping won’t raise the dead, but they will fill you up with the Halloween spirit!

Guacamole is one of the easiest dips to make and you can personalize it to make your own favorite version. If you like extra heat, for example, you can add the jalapeño seeds. If you like it creamy, you can add sour cream or mayo. Guacamole also pairs well with a great number of foods, like Mexican salads, served with meats like carnitas, and on top of your breakfast omelette.

For this recipe, we aim to keep our guacamole simple and low carb, so we just add fresh ingredients with salt and call it a day. The end result is a guacamole full of fresh flavors and a nice, creamy texture. Of course, most people won’t eat guacamole by itself so we paired it with with some quick-to-make cheese crisps so that you can dunk your crisps into the tasty green goodness. Both snacks can be made quickly so that you’ll have plenty of time for celebrating this Halloween season.

Mixing bowl

Parchment paper


Ingredients:

Guacamole

2 ripe avocados

1 1/2 tsp fresh lime juice

1/2 tsp fresh lemon juice

2 T chopped cilantro

1 clove garlic finely chopped

1/4 cup red onion finely chopped

1/2 jalapeno finely chopped (remove seeds)

Salt to taste

Cheese Crisps

Pre-cut cheese slices (Cheddar, Mozzarella, Pepper Jack, etc.)

Salt, cayenne pepper, spices and additional seasonings

Directions:

Guacamole

Step 1 - In a medium sized bowl, mash half of the onions with the avocados and garlic to bring out the flavors.

Step 2 - Continue to mash the avocado mixture until most of the larger avocado chunks are gone.

Step 3 - Add the rest of the onions, cilantro, salt, jalapeños, and citrus. Stir to combine.

*The guacamole should keep for up to a day or two. To minimize browning of the guacamole, place plastic wrap on the surface and pat down to remove air bubbles.

Cheese Crisps

Step 1 - Cut parchment paper into several large rectangle shapes.

Step 2 - Place a cheese slice on the parchment paper.

Step 3 - Season the cheese with salt, pepper, cayenne pepper, herbs or seasoning salt.

Step 4 - Cook the cheese on parchment paper in your microwave on high for 60 seconds to 2 minutes.

Step 5 - Carefully watch the cheese to prevent excess browning. The cheese crisp will be done when there is a nice golden color to it.

Step 6 - Carefully remove the hot cheese crisp and let it cool for 1 minute before transferring cheese to a paper towel to drain the excess oil.

*The leftover cheese crisps should keep for several days in a dry container.
