Keto Pasta

Once in a while we feel like we are being deprived of carbs and we need a way to feel better about that. A play on a Italian carbohydrate laden meal will quench that carb thirst without kicking you out of ketosis! Mind the servings and you will be good to go! The original recipe we found only contained cheese and egg yolk. We added some almond flour to give the “pasta” some stability and texture without adding much of the dreaded carbs! We also added some time to let pasta cure before cooking, which helped improve the texture.
Kitchen tools that are helpful in this recipe: rubber spatula, microwave safe bowl, parchment paper, baking sheet, OXO Good Grips 4-inch Pizza Wheel and Cutter
Ingredients:
1 cup shredded mozzarella
1 egg yolk
1/2 cup almond flour
Directions:
Step 1 - Place the shredded cheese in a microwave safe bowl. Place bowl in microwave to melt cheese, approximately 1 to 2 minutes. Let melted cheese sit at room temperature for a couple minutes to cool slightly.
Step 2 - Add egg and almond flour to melted cheese and fold together quickly with rubber spatula.
Step 3 - Pour “dough” on to parchment paper lined baking sheet. Flatten dough to spread out slightly.
Step 4 - Place a duplicate sized parchment paper sheet on top of “dough” and press dough to flatten to desired thickness, approximately 1/8 of an inch all over
Step 5 - Use a pizza cutter, we used the OXO Good Grips 4-inch Pizza Wheel and Cutter to make “pasta” strips about 1/4 inches for a linguini style or a little wider for fettuccine style
Step 6 - Allow “dough” to sit in refrigerator for about 24 hours to dry and cure.
Step 7 - Bring a pot of water to a boil. Place “pasta” in boiling water for about 2 minutes, or until desired
Step 8 - Drain “pasta” and serve immediately. Sauce your “pasta” with a low carb pasta sauce such as pesto, or Rao’s marinara sauce, or we just used some EVOO, basil and sprinkled with some parmesan.
